On Sunday, January 27th we were fortunate enough to have Ryan Irish, a current LSPT client and former chef, lead approximately 40 people through a great introduction to food preparation. Ryan discussed how to cut certain vegetables, the best way to use your time effectively in the kitchen as well as important food containers for storage and travel. Chicken Fajitas – By Ryan Irish

Ingredients

  • 1 chicken breast
  • 1 Bell pepper
  • 1 small onion
  • 1 can drained and rinsed black beans
  • Any kind of salsa of your choice
  • 1 lime, quartered
  • 2 Mission Street Taco tortillas (optional)/Corn Tortillas/Low-Carb Tortillas/Romaine Lettuce Leaf

Directions

  • Cook your chicken any way you desire (More ideas to come later)
  • Once cooled cut into strips.  4-5oz for one serving
  • Slice into stripes 1/2 bell pepper – I prefer to do a mix of red and yellow.
  • Slice into strips 1/4 small onion
  • Sauté pepper and onion in sauté pan with 1 teaspoon olive oil.  Season with salt and pepper to taste.  Undercook these just a little since you will be reheating them later on. Once cooked set aside.
  • Take 1/2 cup of black beans and mix with salt, pepper, granulated garlic, and cumin (optional).  Season to taste.  Remember you can always add more seasoning!  Season, taste and re-season if need be.
  • Portion out 2oz of salsa into portion cups
  • Put 2 tortillas or whatever you are using to eat your mixture into a container or baggie.

Assemble

  • Put sliced chicken and pepper/onions into the food container.  They can go on top of each other.
  • Put black beans on the side of the chicken and onions
  • Place salsa, lime wedge, and tortillas (optional) on top of everything and cover container.
  • Your whole meal is now ready to go in one container.  To reheat, just take out the salsa, lime, and tortillas.  Pop in the microwave until hot.  Squeeze lime over everything and eat up.
